Truffles grow abundant only in specific seasons which is why purchasing them is difficult and expensive. Truffles are harvested only during winter and summer seasons. The truffles during winter usually appear from October until March but the largest harvests usually take place on December and January when the demand for winter truffles is at its highest.
Winter truffles have a stronger and more pungent aroma than summer truffles. The truffles in winter are generally preferred by most people and are, in fact, more expensive than summer truffles. Winter truffles are very versatile as there are a variety of ways in which these truffles can be used and cooked in the kitchen. Winter truffles are also normally used as stuffing for poultry and meat and garnishing for pastas and other dishes.
